Loco Moco



Salisbury patties
Brown Gravy (you can try my 'mushroom' gravy w/o the mushrooms)    
Rice
Fried egg

Patties
1/2 lb. lean ground beef
1/4 c. cheese-garlic salad croutons, crushed
1/8 tsp. dried marjoram leaves

Sauce

1/2 c. home-style mushroom gravy (please consider using my recipe located here, http://youtu.be/QNv5I5c2NXQ to save on sodium)
2 Tbsp. red wine (you can substitute beef broth)
1 Tbsp. ketchup
1/8 tsp. dried thyme leaves

In medium bowl, combine all patty ingredients; mix well. Shape mixture into two oval patties about 1/2 inch thick.

Heat medium nonstick skillet over medium-high heat until hot.  Add beef patties; cook 5 to 7 minutes or until thoroughly cooked, turning twice.  Remove from skillet; place on serving platter.  Cover to keep warm.

Wipe skillet clean with paper towel. Combine all sauce ingredients in skillet; mix well.  Cook and stir over medium-high heat until bubbly.

If you want to make your own mushroom gravy:

3 Tbsp. butter or margarine
3 Tbsp. flour
1/4 tsp. salt
Dash of ground pepper
Few drops of Worcestershire sauce
1/2 c. consomme or beef or chicken broth
1/2 c. water

Melt butter in saucepan over low heat; add flour and seasonings and brown; add consomme and water gradually while stirring constantly.  Cook until thickened.  Sauce may be thickened with more flour and additional seasonings may also be added as desired (i.e., garlic salt, marjoram powders and bay leaf).

After you make your patties and gravy, place your rice on your plate, then your hamburger patty, a fried egg, and smother in brown gravy.

Not so Traditional Beef Taquitos



I got this recipe from Family Fun. I KNOW that these are not your traditional taquito and that they are made usually from corn tortillas with shredded beef (or chicken) and deep fried.  But this is not my recipe, and it contains things in it that I find pleasing to my tastebuds.

1 tablespoon vegetable oil, plus more for brushing on the taquitos
1 medium onion, finely chopped
1 clove garlic, minced (I bumped this to 4 cloves)
3/4 pound lean ground beef
1 cup salsa, plus more for dipping
2 teaspoons chili powder (I used 1 tsp. but 2 would be better)
1/2 teaspoon salt
1/4 teaspoon pepper
10 (6-inch) flour tortillas (there is enough filling to make 14)
1/2 cup shredded Cheddar or Monterey Jack
Sour cream

Heat the oven to 400ยบ. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook them for 3 minutes, stirring often. Add the beef and use a wooden spoon or a spatula to break it up while it cooks, until it is no longer red, about 3 minutes. Stir in 1/2 cup of the salsa, the chili powder, and the salt and pepper. Cook the mixture over low heat, stirring occasionally, for 10 minutes.

Place the tortillas on a plate and cover them with damp paper towels. Microwave them until warm and pliable, about 45 seconds. Top each tortilla with 1/4 cup of the beef mixture, spreading it to an inch from the edges. Sprinkle cheese evenly over the beef.

Roll up the tortillas and place them on a foil-lined baking sheet with the seam sides down. Brush the taquitos lightly with vegetable oil (I sprayed with Pam and this worked well), then bake them until the filling is heated through and the tortillas are lightly browned, about 8 to 12 minutes (go more for 12 if you want them crispier). Serve them hot with sour cream and/or salsa.

Makes 14 taquitos.  Mother and I had 1-1/2 each. Scott ate FOUR because they were so good!!  But even he admitted that was too much. So I would say bet on 2 a person and you're golden.

These were so good I didn't want to stop eating. Neither did mother. She would normally not finish eating one.  Scott popped his head in my office and said, "these are EFFING delicious!!!"  And he didn't say effing. And he hardly ever swears.  So I think you get the jist of it ;)
